Miss Nona's Southern Bourbon Pecan Pie


My Grandmother's recipe box is always full of home-baked goodness for the holidays; it also has a lot of recipe's with Bourbon and Rum!  And I think her Southern Bourbon Pecan Pie makes a perfect dessert for that Holiday Party, or as a gift!   And here is how she made it!

Southern Bourbon Pecan Pie
This rich bourbon pecan pie is the perfect end to any Dinner!

ingredients

Pie Filling
1 cup sugar
1 cup dark Karo® Syrup
pinch of salt
1/4 cup of real butter
1 teaspoon real vanilla extract
2 Tablespoons Bourbon
3 eggs beaten
1 cup coarsely chopped pecans



Pie Crust (Busy Mom Edition)
Frozen Pie Crust brought to Room Temperature 

Optional
1 cup mini chocolate chips

instructions:  
Preheat Oven to 375 degrees

1. Mix sugar and syrup in a medium pot; heat on low; stirring continuously until the mixture comes to a slight boil.     Remove from heat.


2. Add butter; stir until melted.  (chocolate option: gradually add chocolate chips and stir until melted) 

3. Next, add vanilla and bourbon.  Stir thoroughly.

4. Slowly add in beaten eggs and stir vigorously to evenly blend in the eggs.

5. Add pecans and stir.

6.Pour the pecan mixture into the pie crust and place in the center of the oven.  Check the Pie after 30 mins.  If the crust is starting to brown, cover the edges with aluminum foil and recheck at 45 and 60 mins to make sure that it is "set" or not jiggly.   
Tip:  Crimp the edges of the pie crust when it reaches room temperature to remove the "store bought" look.

7. Remove the pie, place on a wire rack, and cool completely.


8.  Add a touch of whipped cream, and enjoy!


The eggs give the pie a crunchy top and a deliciously gooey middle - you will not be able to resist!

**Note you can omit the bourbon and increase the vanilla to 1 Tablespoon.  (but why would you ?)
